Producing Spring Rolls

I had the chance to visit a very small and humble place in the countryside.
Here is what I saw about the making of spring rolls, later delivered to restaurants or mobile carts where they are served as street food.

This is the house I visited, where the persons live. A very humble place with striking contrasts – like as a satellite dish. The production takes place under the house. The final products are the white rice dishes on the right, left to dry outside the place
The process is mainly done by this lady, who has managed to organise her working place upon a wooden stand, where she has all she needs to complete her work
She takes the cooked rice pasta and levels it on a hot plane with a device that is something between a knife and a spatula
She finishes up the leveling by using the bottom of a flat bowl…
… to obtain a flat dish of the appropriate thickness
During the making, she sometimes takes a break to eat some rice from a hot bowl
She takes her time to eat
After the break she resume the process and passes the dishes to the man next to her
The man starts to unfold the dishes and lay them on the wooden grid
As the work proceeds, the dishes are put in place, one row after the other
When it is full, the grid is put aside; it starts to dry inside the house
I have been told that this man has never left his house in his whole life; he never went to the city or in any other place than the surroundings of his house. It is rather different from the western way of living
